100% Palomino Fino fermented in stainless steel, then aged for 42 months under flor; 8 months in oak butts, followed by 2 years in stainless steel, and finally another 10 months in ex-palo cortado barrels. Finally bottled in March 2014, it has now seen another 8 years' bottle aging. The wine showcases intense savory and oxidative aromatics reminiscent, unsurprisingly, of sherry -- dry figs, salt, and toasted nuts. The palate is chewy, chalky, and dense, leaving behind acidity and saltiness on the palate.
