This is one of the most classical examples of the latter. Stylistically, vin jaune is closely related to sherry in that it is aged under naturally occurring voile, a thin layer of yeast that allows for controlled oxidation. It is redolent with rich, nutty, salty flavors and pairs beautifully with cheese, charcuterie, and boldly flavored dishes.
