From the winemaker: "The Clos du Papillon is harvested in two sorts: a first part on fresh fruits and a second sort later, slightly botrytised with aromas of cooked fruit, quince, smoked. Both sorts are matured in barrels that we assemble after 16 months. The wine then stays for a few months in vats. This blend of sorts gives a very long wine in the mouth with a first attack very citrus, followed by sensations of ripe fruits, exotic fruits and a nice bitterness of grilled almonds at the end of the mouth. The long aging on the lees gives it a very beautiful fat. The jammy nose is also marked by evolutionary aromas." We couldn't have put it better!
